PP means Power Points. This is the amount of times the move can be used during battle, before the Pokemon needs to be healed in a Pokemon Center.

I know what PP means (I'm not that dumb). I want to know what PP left means. Is it just editing how many PP are left? Why would I want to edit that rather than simply the max PP?

Yes, you are editing how many PP are left. If you deposit the Pokemon in storage, or if you heal it at a Pokemon Center, then it will be reset. I tend to leave it at 0, and then heal the Pokemon to normalize the PP.
